CSU Extension Cottage Food Safety Training
This 3 hour training provides a 3 year certification and meets the food safety training requirement for Colorado Cottage Foods Act. Learn the specifics for operating a food business from a home kitchen. Review the current law, Tier 1 and Tier 2 permissible foods and ingredient labeling requirements. We will cover basics of food safety-including proper hygiene; preventing cross contamination and cross contact of food allergens; temperature control for safe food preparation, storage, transporting produce and sales. Resources for food preparation at altitude and for going further with your business will be shared. Cost: $30.00. Registration closes 3 days before training date.


Fermentation
Natural fermentation is one of the oldest means of food preservation. Learn the science of preparing and storing sauerkraut, other fermented vegetables, and yogurt safely in this hands-on workshop. Participants will leave class with recipes, a jar of sauerkraut to ferment at home, and resources.
Cost $25. Registration closes 5 days before training date.

Jams, Jellies and Fruits
Love the flavors of fruits? You can make preserves all year long. Learn how you can enjoy the delightful, fresh picked taste by making fruit preserves, wine jelly,etc. The workshop will cover the basics of water bath canning to ensure safe preservation. Cost: $25.00, for hands-on workshop that includes taking home a jar of jam. Or $20.00 for workshops that do not include taking home a jar of jam.Registration closes 5 days before training date.

Preserving 101: How to Preserve Foods Safely
Individuals who attend the class will:
• Be introduced to the most current, recommended methods for preserving foods (boiling water, pressure canning, freezing, and dehydrating foods)
• See various food preservation supplies and equipment on display
• Take home excellent handouts, approved recipes, and other resources
***Preserving foods at home is not difficult, but it does require following research-based recipes and methods of preserving. Even if you have been a home food preserver for years or you are a first timer, come and learn the latest recommendations. Cost:$20.00 Registration closes 5 days before training date.

Pressure Canning
Learn how a pressure canner works as we walk through each step involved in safely canning vegetables, meats and seafood. Includes free pressure canner dial gauge test ($10 value) – bring your canner lid or just the dial gauge if you have one. Learn the updates on the difference of pressure canner and a pressure cooker appliance. Cost: $20.00. Registration closes 5 days before training date.
